2. What milk (or alt-milk) are you steaming the most?  
Oat milk is pickier than dairy. If 70 % of drinks are oat lattes, you need a roast developed to cut through that sweetness without going sour or grassy.

3. How good (or new) is your barista team?  
Light, finicky roasts shine when the head barista is on… and flop when the new hire is rushing. Our house blends are built to be forgiving—consistent shots even on a chaotic Saturday.
